Ingredients
  

For the Zucchini
  • 2 medium zucchini trimmed and cut into 1/2-inch sticks
For the Coating
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs beaten

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. Mix well.
  3. Dip each zucchini stick into the beaten eggs, ensuring it is fully coated. Let any excess egg drip off.
  4. Roll the egg-coated zucchini sticks in the breadcrumb mixture, pressing gently to help the coating adhere.
  5. Arrange the coated zucchini sticks in a single layer on the prepared baking sheet.
  6. Bake for 18-20 minutes, or until golden brown and crispy, flipping halfway through.
  7. Serve immediately.

Notes

You can serve these with your favorite dipping sauce, such as marinara or ranch.
