Crispy Garlic Herb Roasted Potatoes

These roasted potatoes are crispy on the outside and tender on the inside, seasoned with garlic and herbs.

Ingredients
  

For the Potatoes
  • 2 pounds Yukon Gold potatoes cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Optional Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast for 35-40 minutes, flipping halfway through, until the potatoes are tender and golden brown and crispy.
  5. Garnish with fresh parsley, if desired, before serving.
