Ingredients
  

For the Roll Ups
  • 8 oz cream cheese softened
  • 1/4 cup erythritol or your preferred keto sweetener
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 sheet low carb tortilla e.g., Mission Carb Balance or similar
For the Topping
  • 2 tbsp butter melted
  • 1 tbsp erythritol or your preferred keto sweetener
  • 1 tsp cinnamon

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese, 1/4 cup erythritol, 1 tsp cinnamon, and vanilla extract. Mix until smooth and well combined.
  3. Spread the cream cheese mixture evenly over one side of the low carb tortilla, leaving a small border around the edges.
  4. Carefully roll up the tortilla tightly, starting from one edge.
  5. Slice the rolled tortilla into 12 equal pieces.
  6. Place the roll-ups cut-side up on the prepared baking sheet.
  7. In a small bowl, whisk together the melted butter, 1 tbsp erythritol, and 1 tsp cinnamon for the topping.
  8. Brush the cinnamon-butter mixture over the tops of the roll-ups.
  9. Bake for 12-15 minutes, or until golden brown and slightly crispy.
  10. Let cool slightly before serving.
