- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened cream cheese, 1/4 cup erythritol, 1 tsp cinnamon, and vanilla extract. Mix until smooth and well combined.
- Spread the cream cheese mixture evenly over one side of the low carb tortilla, leaving a small border around the edges.
- Carefully roll up the tortilla tightly, starting from one edge.
- Slice the rolled tortilla into 12 equal pieces.
- Place the roll-ups cut-side up on the prepared baking sheet.
- In a small bowl, whisk together the melted butter, 1 tbsp erythritol, and 1 tsp cinnamon for the topping.
- Brush the cinnamon-butter mixture over the tops of the roll-ups.
- Bake for 12-15 minutes, or until golden brown and slightly crispy.
- Let cool slightly before serving.
