Ingredients
  

For the Onion Rings
  • 2 large onions sliced into 1/2-inch rings
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs beaten
For Cooking
  • 3 tbsp avocado oil or other high-heat oil

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Separate the onion rings and pat them dry with paper towels.
  3. In one shallow bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  4. In the second shallow bowl, whisk the eggs.
  5. Dip each onion ring first into the beaten eggs, letting any excess drip off, then dredge it in the almond flour mixture, pressing to coat evenly.
  6. Place the coated onion rings in a single layer on the prepared baking sheet.
  7. Bake for 10 minutes, then flip the onion rings and bake for another 10 minutes, or until golden brown and crispy.
  8. For extra crispiness, you can lightly spray the rings with avocado oil before baking.
