- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Separate the onion rings and pat them dry with paper towels.
- In one shallow bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
- In the second shallow bowl, whisk the eggs.
- Dip each onion ring first into the beaten eggs, letting any excess drip off, then dredge it in the almond flour mixture, pressing to coat evenly.
- Place the coated onion rings in a single layer on the prepared baking sheet.
- Bake for 10 minutes, then flip the onion rings and bake for another 10 minutes, or until golden brown and crispy.
- For extra crispiness, you can lightly spray the rings with avocado oil before baking.
