Ingredients
  

For the Puffs
  • 2 cups mashed potatoes cold
  • 1 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 1 large egg beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For Frying
  • 1/2 cup vegetable oil

Equipment

  • Baking sheet
  • Large bowl
  • Frying pan

Method
 

  1. In a large bowl, combine the mashed potatoes, shredded cheddar cheese, flour, beaten egg, salt, and pepper. Mix well until all ingredients are incorporated.
  2. Roll the mixture into small balls, about 1 inch in diameter. You should get about 20 puffs.
  3. Heat the vegetable oil in a frying pan over medium heat.
  4. Carefully place the potato puffs into the hot oil, working in batches to avoid overcrowding the pan.
  5. Fry the puffs for about 3-4 minutes per side, or until they are golden brown and crispy.
  6. Remove the puffs from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  7. Serve hot.

Notes

You can add other seasonings like garlic powder or onion powder to the potato mixture for extra flavor. Serve with your favorite dipping sauce.
