Ingredients
  

For the Cucumbers
  • 2 Cucumbers thinly sliced
For the Spicy Peanut Sauce
  • 1/4 cup Peanut butter creamy
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Honey
  • 1/2 teaspoon Chili garlic sauce or to taste
  • 1 clove Garlic minced
  • 2-3 tablespoons Water to thin sauce

Equipment

  • Knife
  • Cutting board
  • Small bowl
  • Whisk

Method
 

  1. Prepare the cucumbers by slicing them thinly. You can use a knife or a mandoline.
  2. In a small bowl, combine the peanut butter, soy sauce, rice vinegar, sesame oil, honey, chili garlic sauce, and minced garlic.
  3. Whisk the ingredients together until smooth. Add water, one tablespoon at a time, until the sauce reaches your desired consistency.
  4. Pour the peanut sauce over the sliced cucumbers and toss gently to coat.
  5. Serve immediately.

Notes

For an extra garnish, you can sprinkle sesame seeds or chopped peanuts on top before serving.
