For the Chicken Stir-fry
  • 1 lb Chicken breast cut into bite-sized pieces
  • 2 cups Broccoli florets
  • 1 cup Bell pepper sliced
  • 1/4 cup Soy sauce low-sodium
  • 1 tbsp Sesame oil
  • 2 cloves Garlic minced
For the Salmon with Asparagus
  • 2 pieces Salmon fillets
  • 1 bunch Asparagus trimmed
  • 2 tbsp Olive oil

Method
 

  1. For the Chicken Stir-fry: Heat sesame oil in a skillet over medium-high heat. Add chicken and cook until browned. Add broccoli, bell pepper, and garlic. Stir-fry for 5-7 minutes until vegetables are tender-crisp. Pour in soy sauce and toss to combine. Cook for another 2 minutes.
  2. For the Salmon with Asparagus: Preheat oven to 400°F (200°C). Place salmon fillets and asparagus on a baking sheet. Drizzle with olive oil and season with salt and pepper. Squeeze lemon wedges over the top.
  3. Bake for 12-15 minutes, or until salmon is cooked through and asparagus is tender.
