- Season the chicken thighs lightly with salt and black pepper. Place the seasoned chicken thighs into the insert of your slow cooker.
- In a small bowl, mix the honey, soy sauce, minced garlic, and red pepper flakes (if using). Pour this sauce mixture over the chicken thighs in the slow cooker.
- Cover the slow cooker. Cook on low for 5 to 6 hours, or cook on high for 2.5 to 3 hours.
- Remove the cooked chicken thighs. Cut the chicken into chunks or shred it using two forks. Return the chicken to the slow cooker and mix it into the sauce. Let it sit for at least 5 to 10 minutes so the chicken absorbs the juices.
- Serve the chicken hot with your choice of toppings.
Notes
For the best flavor absorption, allow the chicken to rest in the sauce for the full 10 minutes after shredding or cutting.
