Method
- Preheat your oven to 400°F (200°C). Lightly grease a large baking dish.
- In a large bowl, toss the potatoes with olive oil, kosher salt, black pepper, and paprika until they are evenly coated.
- Spread the seasoned potatoes in a single layer in the prepared baking dish.
- Bake the potatoes for 15 minutes.
- While the potatoes bake, place the diced chicken in the same bowl you used for the potatoes. Pour the Parmesan garlic sauce and water or stock over the chicken and toss to coat.
- Remove the baking dish from the oven. Add the coated chicken mixture to the dish with the partially cooked potatoes, spreading it out evenly.
- Return the dish to the oven and bake for another 15 minutes, or until the chicken is cooked through and the potatoes are tender.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese (if using) over the top. Bake for 5 more minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
If you do not have a creamy Parmesan garlic sauce, you can make a simple version by mixing 1 cup of heavy cream, 1/2 cup of grated Parmesan cheese, 3 cloves of minced garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper, then heating it until slightly thickened before using.
