Easy Moist Banana Bread

This recipe provides instructions for making moist banana bread. You can bake it as a loaf or as muffins.

Ingredients
  

  • 1/2 cup butter or margarine
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla
  • 2 eggs, beaten
  • 3 ripe bananas, smashed (about 1 cup)
  • 1/4 cup milk
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 - 1 cup chopped pecans or walnuts (optional)

  • Bread pan (2-3 smaller pans)
  • Muffin cups

Method
 

  1. Cream the butter and sugar together.
  2. Add the vanilla and beaten eggs.
  3. Combine the dry ingredients.
  4. Add the dry ingredients alternately with the smashed bananas and milk to the wet mixture.
  5. Add nuts if you are using them.
  6. Grease and flour one bread pan, or pour the batter into muffin cups.
  7. For a loaf, bake at 350 degrees Fahrenheit for 45 to 60 minutes. For muffins, bake at 350 degrees Fahrenheit for 20 to 25 minutes.
  8. Check the bread with a toothpick starting at 45 minutes. If it is not done, continue baking, checking every 15 minutes up to 1 hour and 30 minutes if necessary.

Notes

If you use a larger bread pan for one loaf, it will need to bake longer. Check for doneness with a toothpick after 45 minutes.
