Energizing Banana Oatmeal Bars

Ingredients
  

For the Bars
  • 2 ripe bananas mashed
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar packed

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking dish.
  2. In a large bowl, mash the ripe bananas. Stir in the melted butter and vanilla extract.
  3. In a separate bowl, whisk together the rolled oats, flour, baking soda, salt, cinnamon, and brown sugar.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Spread the batter evenly into the prepared baking dish.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bars cool completely in the dish before cutting into 12 bars.

Notes

Store leftover bars in an airtight container at room temperature for up to 3 days.
