Method
- Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking dish.
- In a large bowl, mash the ripe bananas. Stir in the melted butter and vanilla extract.
- In a separate bowl, whisk together the rolled oats, flour, baking soda, salt, cinnamon, and brown sugar.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Spread the batter evenly into the prepared baking dish.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the dish before cutting into 12 bars.

Store leftover bars in an airtight container at room temperature for up to 3 days.
