- In a large pot, combine chicken broth, soy sauce, gochujang, sesame oil, minced garlic, and grated ginger. Bring to a simmer over medium heat.
- While the broth simmers, cook ramen noodles according to package directions. Drain and set aside.
- Prepare the eggs by soft-boiling them.
- Divide the cooked ramen noodles between two bowls.
- Ladle the hot broth over the noodles.
- Top each bowl with shredded chicken, a soft-boiled egg (halved), sliced scallions, and a sheet of nori, if using.
Notes
Adjust the amount of gochujang to control the spice level. You can also add other toppings like corn, bamboo shoots, or bean sprouts.
