- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the cubed sweet potatoes with the melted butter, minced garlic, salt, and pepper. Toss to coat the sweet potatoes evenly.
- Spread the coated sweet potatoes in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, flipping them halfway through the cooking time.
- Garnish with fresh parsley, if desired, before serving.
Notes
You can adjust the amount of garlic to your preference. For a spicier kick, add a pinch of red pepper flakes.
