Ingredients
  

Sweet Potatoes
  • 2 pounds sweet potatoes peeled and cut into 1-inch cubes
Garlic Butter Mixture
  • 3 tablespoons butter melted
  • 2 cloves garlic minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped, for garnish (optional)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the cubed sweet potatoes with the melted butter, minced garlic, salt, and pepper. Toss to coat the sweet potatoes evenly.
  3. Spread the coated sweet potatoes in a single layer on the prepared baking sheet.
  4. Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, flipping them halfway through the cooking time.
  5. Garnish with fresh parsley, if desired, before serving.

Notes

You can adjust the amount of garlic to your preference. For a spicier kick, add a pinch of red pepper flakes.
