Garlic Herb Roasted Potatoes

These garlic herb roasted potatoes are crispy on the outside and tender on the inside. They are seasoned with garlic and herbs for a flavorful side dish.

Ingredients
  

  • 2 lbs Potatoes Yukon Gold or red potatoes, cut into 1-inch cubes
  • 3 tbsp Olive oil
  • 4 cloves Garlic minced
  • 1 tsp Dried rosemary
  • 1 tsp Dried thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh parsley chopped, for garnish

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the potato cubes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  4. Roast for 35-40 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
  5. Garnish with fresh parsley before serving.

Notes

For extra crispy potatoes, you can soak the cut potatoes in cold water for 30 minutes before drying them thoroughly and proceeding with the recipe.
