Garlic Mushroom Chicken

Ingredients
  

  • 4 boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 8 ounces mushrooms sliced
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • 2 tablespoons fresh parsley chopped
  • salt to taste
  • black pepper to taste

Method
 

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add mushrooms to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  5. Stir in butter and heavy cream. Bring to a simmer and cook until the sauce slightly thickens, about 3-5 minutes.
  6. Return chicken to the skillet. Stir to coat the chicken in the sauce. Cook for another 2-3 minutes, or until chicken is cooked through.
  7. Stir in fresh parsley. Season with additional salt and pepper to taste.
