Method
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add mushrooms to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in butter and heavy cream. Bring to a simmer and cook until the sauce slightly thickens, about 3-5 minutes.
- Return chicken to the skillet. Stir to coat the chicken in the sauce. Cook for another 2-3 minutes, or until chicken is cooked through.
- Stir in fresh parsley. Season with additional salt and pepper to taste.
