Garlic Sauce Baby Potatoes

A simple and flavorful recipe for baby potatoes coated in a rich garlic sauce.

Ingredients
  

  • 1 kg baby potatoes halved or quartered if large
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 2 tbsp butter melted
  • 2 tbsp fresh parsley chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • Large bowl

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the baby potatoes with olive oil, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until the potatoes are tender and golden brown, flipping halfway through.
  5. While the potatoes are roasting, prepare the garlic sauce. In a small bowl, combine the minced garlic, melted butter, and chopped parsley.
  6. Once the potatoes are cooked, remove them from the oven and transfer them back to the large bowl.
  7. Pour the garlic sauce over the hot potatoes and toss to coat.
  8. Serve immediately.

Notes

You can add a pinch of red pepper flakes to the garlic sauce for a little heat.
