- Heat olive oil in a large skillet over medium-high heat.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add broccoli and bell peppers to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
- Stir in cherry tomatoes and cook for another 2 minutes.
- In a small bowl, whisk together chicken broth, lemon juice, oregano, salt, and pepper.
- Pour the sauce over the vegetables in the skillet. Bring to a simmer and cook for 1-2 minutes, until the sauce slightly thickens.
- Return the cooked shrimp to the skillet and toss to combine with the vegetables and sauce.
- Garnish with fresh chopped parsley before serving.

Serve this skillet meal on its own, or with a side of rice or quinoa for a more substantial meal.
