- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- In a small bowl, whisk together the soy sauce, honey, sesame oil, grated ginger, and minced garlic to make the glaze.
- Pat the cod fillets dry with paper towels. Place them in the prepared baking dish. Brush the tops of the fillets with olive oil and season with salt and pepper.
- Pour the ginger soy glaze evenly over the cod fillets.
- Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillets.
- Garnish with sesame seeds and sliced scallions, if desired, before serving.
