Ginger Soy Glazed Cod

Ingredients
  

For the Glaze
  • 1/4 cup Soy sauce
  • 2 tablespoons Honey
  • 1 tablespoon Sesame oil
  • 1 tablespoon Freshly grated ginger
  • 2 cloves Garlic minced
For the Cod
  • 4 Cod fillets about 6 oz each
  • 1 tablespoon Olive oil
  • 1 Salt to taste
  • 1 Black pepper to taste
  • 1 tablespoon Sesame seeds optional, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. In a small bowl, whisk together the soy sauce, honey, sesame oil, grated ginger, and minced garlic to make the glaze.
  3. Pat the cod fillets dry with paper towels. Place them in the prepared baking dish. Brush the tops of the fillets with olive oil and season with salt and pepper.
  4. Pour the ginger soy glaze evenly over the cod fillets.
  5. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillets.
  6. Garnish with sesame seeds and sliced scallions, if desired, before serving.

Notes

Serve this glazed cod with rice and steamed vegetables for a complete meal.
