Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, parsley, mint, grated onion, minced garlic, oregano, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
- Add the beaten egg and breadcrumbs to the bowl. Mix again until everything is evenly distributed.
- Roll the mixture into small meatballs, about 1 to 1.5 inches in diameter. You should get about 20-24 meatballs.
- Place the meatballs on the prepared baking sheet, ensuring they are not touching.
- Bake for 12-15 minutes, or until the meatballs are cooked through and lightly browned. The internal temperature should reach 165°F (74°C).
- Serve the Greek chicken meatballs warm with lemon wedges and tzatziki sauce, if desired.
Notes
You can adjust the herbs and spices to your preference. For a spicier kick, add a pinch of red pepper flakes. These meatballs can also be pan-fried or grilled.
