Greek Chicken Tenders

These Greek chicken tenders are marinated in lemon, garlic, and herbs, then baked until golden and tender. They're a healthier take on a classic favorite.

Ingredients
  

For the Chicken
  • 1.5 lbs chicken breast cut into 1-inch strips
For the Marinade
  • 1/4 cup olive oil
  • 1/4 cup lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper for the marinade.
  3. Add the chicken strips to the bowl and toss to coat them evenly in the marinade. Let them marinate for at least 15 minutes at room temperature.
  4. Arrange the marinated chicken tenders in a single layer on the prepared baking sheet.
  5. Bake for 18-20 minutes, or until the chicken is cooked through and lightly golden brown. Flip the tenders halfway through baking for even cooking.
  6. Serve hot with your favorite dipping sauce or a side salad.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the marinade. These tenders are delicious served with tzatziki sauce or a lemon-herb aioli.
