- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the Arborio rice and toast for 1-2 minutes, stirring constantly.
- Pour in the vegetable broth and lemon juice. Season with salt and pepper.
- Bring to a simmer, then reduce heat to low, cover, and cook for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
- Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
- Garnish with fresh parsley before serving.
Notes
You can adjust the amount of lemon juice to your preference. This rice is delicious served with grilled chicken or fish.
