Greek Lemon Rice

This Greek lemon rice is a simple and flavorful side dish that pairs well with many main courses.

Ingredients
  

  • 1 cup Arborio rice
  • 2 cups Vegetable broth
  • 1/4 cup Fresh lemon juice
  • 2 tablespoons Olive oil
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Fresh parsley chopped, for garnish

  • Measuring cups
  • Measuring spoons

Method
 

  1. Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the Arborio rice and toast for 1-2 minutes, stirring constantly.
  4. Pour in the vegetable broth and lemon juice. Season with salt and pepper.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
  6. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  7. Garnish with fresh parsley before serving.

Notes

You can adjust the amount of lemon juice to your preference. This rice is delicious served with grilled chicken or fish.
