Ground Turkey Stuffed Peppers

A simple and healthy recipe for ground turkey stuffed bell peppers.

Ingredients
  

For the Peppers
  • 4 bell peppers any color, tops removed, seeds and membranes removed
For the Filling
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese optional

Equipment

  • Skillet
  • Knife
  • Cutting board

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium-high heat, cook the ground turkey until browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet with the turkey. Cook until the onion is softened, about 5 minutes.
  4. Stir in the cooked rice, diced tomatoes (undrained), Italian seasoning, salt, and pepper. Mix well to combine.
  5. Spoon the turkey mixture evenly into the prepared bell pepper halves.
  6. Place the stuffed peppers in a baking dish. You can add about 1/2 inch of water to the bottom of the dish to help steam the peppers.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil, sprinkle with cheese if desired, and bake for another 5-10 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Notes

Serve hot. These stuffed peppers can be a complete meal on their own.
