Method
- Preheat your oven to 375°F (190°C).
- In a skillet over medium-high heat, cook the ground turkey until browned. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet with the turkey. Cook until the onion is softened, about 5 minutes.
- Stir in the cooked rice, diced tomatoes (undrained), Italian seasoning, salt, and pepper. Mix well to combine.
- Spoon the turkey mixture evenly into the prepared bell pepper halves.
- Place the stuffed peppers in a baking dish. You can add about 1/2 inch of water to the bottom of the dish to help steam the peppers.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil, sprinkle with cheese if desired, and bake for another 5-10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Notes
Serve hot. These stuffed peppers can be a complete meal on their own.
