- Heat the olive oil in a large skillet over medium-high heat.
- Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic, diced potatoes, dried thyme, black pepper, and salt. Cook for 1 minute until fragrant.
- Pour in the chicken broth, bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
- Uncover and cook for another 5 minutes to allow the sauce to thicken slightly.
- Garnish with fresh parsley before serving.
Notes
You can add other vegetables like peas or carrots along with the potatoes.
