Ground Turkey with Potatoes

A simple and hearty ground turkey and potato skillet dish.

Ingredients
  

For the Skillet
  • 1 tablespoon Olive oil
  • 1 pound Ground turkey
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 medium Potatoes peeled and diced
  • 1/2 teaspoon Dried thyme
  • 1/4 teaspoon Black pepper
  • 1/2 teaspoon Salt
  • 1/2 cup Chicken broth
  • 1/4 cup Fresh parsley chopped, for garnish

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, diced potatoes, dried thyme, black pepper, and salt. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth, bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
  6. Uncover and cook for another 5 minutes to allow the sauce to thicken slightly.
  7. Garnish with fresh parsley before serving.

Notes

You can add other vegetables like peas or carrots along with the potatoes.
