- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- In a large skillet over medium-high heat, cook the ground turkey until browned. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the chopped zucchini, diced tomatoes (with their juice), Italian seasoning, salt, and pepper. Cook for 5-7 minutes, or until the zucchini is tender-crisp.
- Transfer the mixture to the prepared baking dish.
- In a small bowl, combine the shredded cheddar cheese and breadcrumbs. Sprinkle this mixture evenly over the top of the casserole.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
- Let the casserole rest for a few minutes before serving.
Notes
You can add other vegetables like bell peppers or corn for extra flavor and texture.
