Ingredients
  

For the Salmon
  • 4 6-ounce salmon fillets skin on or off
  • 2 tbsp olive oil
  • 1 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Vegetables
  • 1 lb broccoli florets
  • 1 lb cherry tomatoes
  • 1 medium red onion cut into wedges
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the broccoli florets, cherry tomatoes, and red onion wedges with 2 tablespoons of olive oil, dried oregano, salt, and pepper. Spread the vegetables in a single layer on a baking sheet.
  3. Roast the vegetables for 10 minutes.
  4. While the vegetables are roasting, pat the salmon fillets dry with paper towels. In a small bowl, mix together 2 tablespoons of olive oil, dill, garlic powder, salt, and pepper.
  5. Brush the salmon fillets with the olive oil mixture.
  6. After 10 minutes, remove the baking sheet from the oven. Push the vegetables to the sides of the baking sheet to make space for the salmon. Place the salmon fillets on the baking sheet.
  7. Return the baking sheet to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
  8. Let the salmon rest for 5 minutes before serving.
