Pancakes
  • 2 ripe bananas mashed
  • 1 cup rolled oats
  • 2 large eggs
  • 1/2 cup milk or dairy-free alternative
  • 1 tsp baking powder
  • 1/2 tsp cinnamon optional

Method
 

  1. In a blender, combine the mashed bananas, rolled oats, eggs, milk, baking powder, and cinnamon (if using). Blend until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  4. Cook for about 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles appear on the surface.
