- In a bowl, combine the mashed avocado, chopped red onion, chopped cilantro, lime juice, salt, and pepper. Mix well.
- Add the cooked chicken to the avocado mixture and stir to combine.
- Warm the tortillas slightly in a dry skillet over medium heat for about 30 seconds per side, or until pliable.
- Lay the warm tortillas flat. If using, spread spinach evenly over each tortilla.
- Spoon the chicken and avocado mixture onto the center of each tortilla. Top with cherry tomatoes if desired.
- Fold in the sides of the tortillas and then roll them up tightly to form wraps.
- Slice in half if desired and serve immediately.
