Healthy Chicken Avocado Wrap

Ingredients
  

For the Wrap
  • 2 whole wheat tortillas
  • 1 cup cooked chicken breast shredded or diced
  • 1/2 ripe avocado mashed
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
Optional Add-ins
  • 1/2 cup spinach
  • 1/4 cup cherry tomatoes halved

Method
 

  1. In a bowl, combine the mashed avocado, chopped red onion, chopped cilantro, lime juice, salt, and pepper. Mix well.
  2. Add the cooked chicken to the avocado mixture and stir to combine.
  3. Warm the tortillas slightly in a dry skillet over medium heat for about 30 seconds per side, or until pliable.
  4. Lay the warm tortillas flat. If using, spread spinach evenly over each tortilla.
  5. Spoon the chicken and avocado mixture onto the center of each tortilla. Top with cherry tomatoes if desired.
  6. Fold in the sides of the tortillas and then roll them up tightly to form wraps.
  7. Slice in half if desired and serve immediately.

Notes

For best results, use fresh ingredients. You can substitute other cooked poultry or even firm tofu for the chicken.
