Healthy Nut Energy Cookies

Ingredients
  

Cookies
  • 1 cup rolled oats
  • 1/2 cup chopped nuts e.g., almonds, walnuts
  • 1/4 cup dried fruit e.g., raisins, cranberries
  • 1/4 cup honey
  • 2 tablespoons coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, chopped nuts, and dried fruit.
  3. In a separate small bowl, whisk together the honey, melted coconut oil, vanilla extract, and salt.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet, forming cookies.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store these cookies in an airtight container at room temperature for up to 3 days.
