- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the rolled oats, chopped nuts, and dried fruit.
- In a separate small bowl, whisk together the honey, melted coconut oil, vanilla extract, and salt.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet, forming cookies.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
