  • 16 oz cottage cheese full fat
  • 1 cup pumpkin puree not pie filling
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Method
 

  1. Preheat your oven to 350F (175C). Lightly grease a baking dish.
  2. In a mixing bowl, combine cottage cheese, pumpkin puree, eggs, maple syrup, and vanilla extract. Mix until smooth.
  3. Stir in pumpkin pie spice, cinnamon, and salt.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 30-35 minutes, or until the center is set.
  6. Let cool slightly before serving.
