Ingredients
  

For the Bars
  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Optional Add-ins
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, combine the rolled oats, almond flour, pumpkin pie spice, baking soda, and salt. Mix well.
  3. In a separate bowl, whisk together the pumpkin puree, maple syrup, melted coconut oil, and eggs until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in any optional add-ins like nuts or chocolate chips.
  5. Spread the batter evenly into the prepared baking pan. Press down gently with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bars cool completely in the pan before cutting them into 12 bars.
