Healthy Stir-Fry Chicken

Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breast cut into bite-sized pieces
  • 1 tbsp soy sauce low sodium
  • 1 tsp cornstarch
For the Stir-Fry
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell pepper any color
  • 1/4 cup low-sodium chicken broth
  • 2 tbsp soy sauce low sodium
  • 1 tsp honey

Equipment

  • Wok or large skillet
  • Knife
  • Cutting board

Method
 

  1. In a medium bowl, toss the chicken pieces with 1 tablespoon of soy sauce and cornstarch. Set aside.
  2. Heat the sesame oil in a wok or large skillet over medium-high heat.
  3. Add the minced garlic and grated ginger to the wok and stir-fry for about 30 seconds until fragrant.
  4. Add the chicken to the wok and stir-fry until browned and cooked through, about 5-7 minutes.
  5. Add the broccoli florets, sliced carrots, and sliced bell pepper to the wok. Stir-fry for another 3-5 minutes, until the vegetables are tender-crisp.
  6. In a small bowl, whisk together the chicken broth, 2 tablespoons of soy sauce, and honey. Pour the sauce into the wok and stir to combine. Cook for 1-2 minutes, until the sauce has thickened slightly.
  7. Serve immediately over rice or noodles.

You can customize this stir-fry with your favorite vegetables. Other good options include snap peas, mushrooms, or water chestnuts.
