- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion and minced garlic to the skillet. Cook until softened, about 3-5 minutes.
- Stir in chopped water chestnuts, soy sauce, rice vinegar, sesame oil, and ground ginger. Cook for another 2-3 minutes, stirring to combine.
- Season with salt and pepper to taste.
- Spoon the turkey mixture into the prepared lettuce leaves.
