Ingredients
  

For the Filling
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup water chestnuts chopped
  • 1/4 cup soy sauce or tamari for gluten-free
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste Salt and pepper
For Serving
  • 8 large lettuce leaves such as butter or iceberg lettuce
  • Optional garnishes Optional garnishes e.g., chopped peanuts, sliced green onions, sriracha

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add chopped onion and minced garlic to the skillet. Cook until softened, about 3-5 minutes.
  4. Stir in chopped water chestnuts, soy sauce, rice vinegar, sesame oil, and ground ginger. Cook for another 2-3 minutes, stirring to combine.
  5. Season with salt and pepper to taste.
  6. Spoon the turkey mixture into the prepared lettuce leaves.
  7. Add your favorite optional garnishes and serve immediately.

Notes

You can adjust the soy sauce and other seasonings to your preference. For a spicier kick, add a pinch of red pepper flakes with the garlic.
