Method
- Heat the sesame oil in a large pot over medium-high heat.
- Add the chicken pieces and cook until browned on all sides.
- Pour in the chicken broth, add the grated ginger and minced garlic. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Add the chopped bok choy, soy sauce, salt, and pepper. Cook for another 5-7 minutes, or until the bok choy is tender.
- Taste and adjust seasoning if needed. Serve hot.
Notes
You can add other vegetables like carrots or mushrooms. For a spicier soup, add a pinch of red pepper flakes.
