Hearty Bok Choy Chicken Soup

Ingredients
  

For the Soup
  • 1 tablespoon sesame oil
  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 inch ginger grated
  • 2 cloves garlic minced
  • 2 heads bok choy chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste

  • Knife
  • Cutting board

Method
 

  1. Heat the sesame oil in a large pot over medium-high heat.
  2. Add the chicken pieces and cook until browned on all sides.
  3. Pour in the chicken broth, add the grated ginger and minced garlic. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes.
  5. Add the chopped bok choy, soy sauce, salt, and pepper. Cook for another 5-7 minutes, or until the bok choy is tender.
  6. Taste and adjust seasoning if needed. Serve hot.

Notes

You can add other vegetables like carrots or mushrooms. For a spicier soup, add a pinch of red pepper flakes.
