- Heat the olive oil in a large pot over medium heat.
- Add the carrots, zucchini, onion, and celery to the pot. Cook for about 5 to 7 minutes until the vegetables begin to soften.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the vegetable broth and water. Add the diced tomatoes, Italian seasoning, and dry basil.
- Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
- Add the drained Great Northern beans, Kidney beans, and pasta to the pot. Continue to simmer until the pasta is cooked according to package directions, about 8 to 10 minutes.
- Taste and adjust seasoning if needed before serving hot.
Notes
You can substitute the beans with cannellini beans or chickpeas. If you prefer a thicker soup, use less water.
