Ingredients

  • 1 tbsp olive oil
  • 2 medium carrots diced into small cubes
  • 2 small zucchinis diced into small cubes
  • 1/2 large onion diced into small cubes
  • 6 celery ribs diced into small cubes
  • 2 cloves of garlic minced
  • 28 oz canned diced tomatoes
  • 32 oz vegetable broth
  • 2 cups water
  • 1 tbsp Italian seasoning
  • 1 tbsp dry basil
  • 15 canned Great Northern beans drained
  • 15 canned Kidney beans drained
  • 1/2 cup pasta

Equipment

  • Large pot

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the carrots, zucchini, onion, and celery to the pot. Cook for about 5 to 7 minutes until the vegetables begin to soften.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the vegetable broth and water. Add the diced tomatoes, Italian seasoning, and dry basil.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  6. Add the drained Great Northern beans, Kidney beans, and pasta to the pot. Continue to simmer until the pasta is cooked according to package directions, about 8 to 10 minutes.
  7. Taste and adjust seasoning if needed before serving hot.

Notes

You can substitute the beans with cannellini beans or chickpeas. If you prefer a thicker soup, use less water.
