Herb-Crusted Lamb Chops

Ingredients
  

For the Lamb Chops
  • 8 lamb chops about 1-inch thick
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Herb Crust
  • 1/2 cup breadcrumbs panko or regular
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 clove garlic minced
  • 2 tbsp olive oil

  • Baking sheet
  • Small bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Pat the lamb chops dry with paper towels. Brush them with 2 tablespoons of olive oil and season with salt and pepper.
  3. In a small bowl, combine the breadcrumbs, parsley, rosemary, thyme, and minced garlic. Stir in the remaining 2 tablespoons of olive oil until the mixture is evenly moistened.
  4. Press the herb mixture onto the top of each lamb chop, coating them evenly.
  5. Place the lamb chops on a baking sheet.
  6. Bake for 15-20 minutes, or until the internal temperature reaches your desired level of doneness (135°F for medium-rare, 145°F for medium).
  7. Let the lamb chops rest for a few minutes before serving.
