Ingredients
  

Soup Base
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 6 cups chicken broth low sodium
Protein Options
  • 1 pound chicken breast cooked and shredded
  • 1 pound ground turkey cooked
  • 1 can black beans rinsed and drained
Vegetables
  • 1 cup broccoli florets
  • 1 cup spinach fresh
  • 1 medium zucchini diced
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add your chosen protein options (shredded chicken, cooked ground turkey, or black beans) to the pot.
  6. Stir in the vegetables: broccoli florets, diced zucchini.
  7. Season with salt, black pepper, and dried thyme.
  8. Simmer for 15-20 minutes, or until vegetables are tender.
  9. Stir in fresh spinach during the last 2 minutes of cooking until wilted.
  10. Serve hot.
