High Protein Soup with Chicken and Veggies

Ingredients
  

For the Soup
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 pound Boneless, skinless chicken breast, cut into bite-sized pieces
  • 6 cups Chicken broth
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 1 cup Broccoli florets
  • 1/2 teaspoon Dried thyme
  • Salt to taste Salt
  • Black pepper to taste Black pepper

Equipment

  • Knife
  • Cutting board

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until softened, about 5 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Add the chicken pieces and cook until lightly browned on all sides.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the chopped carrots, celery, broccoli florets, and dried thyme.
  7. Reduce heat, cover, and simmer for 20-25 minutes, or until vegetables are tender and chicken is cooked through.
  8. Season with salt and black pepper to taste.
  9. Serve hot.

Notes

You can add other vegetables like peas, corn, or spinach. For extra flavor, add a bay leaf during simmering and remove before serving.
