- In a medium bowl, combine the chicken pieces with 1 tablespoon soy sauce and 1 teaspoon sesame oil. Let marinate for at least 10 minutes.
- In a separate bowl, toss the marinated chicken with cornstarch and black pepper until evenly coated.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange the coated chicken pieces in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes, or until the chicken is cooked through and golden brown.
- While the chicken is baking, prepare the sauce. In a small saucepan, whisk together honey, soy sauce, rice vinegar, minced garlic, and grated ginger.
- Cook the sauce over medium heat, stirring constantly, until it thickens slightly, about 3-5 minutes. Stir in 1 tablespoon of sesame oil.
- Once the chicken is baked, transfer it to a clean bowl. Pour the honey garlic sauce over the chicken and toss to coat evenly.
- Serve the honey garlic chicken bites immediately. Garnish with sesame seeds and chopped green onions if desired.
