Irish Chicken Whiskey Cream

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
For the Sauce
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 0.5 cup Irish whiskey
  • 1.5 cups heavy cream
  • 0.25 cup chicken broth
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the Irish whiskey and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes to reduce slightly.
  5. Stir in the heavy cream and chicken broth. Bring to a simmer and cook, stirring occasionally, until the sauce thickens, about 5-7 minutes.
  6. Return the cooked chicken to the skillet and stir to coat with the sauce. Heat through for 1-2 minutes.
  7. Garnish with fresh chopped parsley before serving.

Notes

Serve this dish with mashed potatoes, rice, or crusty bread to soak up the delicious sauce.
