Method
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
- Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Pour in the Irish whiskey and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes to reduce slightly.
- Stir in the heavy cream and chicken broth. Bring to a simmer and cook, stirring occasionally, until the sauce thickens, about 5-7 minutes.
- Return the cooked chicken to the skillet and stir to coat with the sauce. Heat through for 1-2 minutes.
- Garnish with fresh chopped parsley before serving.

Serve this dish with mashed potatoes, rice, or crusty bread to soak up the delicious sauce.
