- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken, orzo pasta, chopped parsley, and dried oregano.
- Reduce heat and simmer for 10-12 minutes, or until orzo is cooked through.
- Season with salt and black pepper to taste.
- Serve hot.
