- In a bowl, combine the cooked and cooled Arborio rice with grated Parmesan cheese, olive oil, and salt. Mix well to ensure the rice is evenly coated and seasoned.
- Lay out a sheet of plastic wrap on your work surface. Spread a thin layer of the seasoned rice mixture evenly over the plastic wrap, leaving a small border.
- Arrange your chosen fillings (prosciutto, mozzarella, roasted red pepper strips, and basil leaves) in a line across the center of the rice layer.
- Using the plastic wrap to help, carefully roll the rice and fillings into a tight log, similar to making sushi.
- Once rolled, twist the ends of the plastic wrap to secure the log. Chill in the refrigerator for at least 15 minutes to help it firm up.
- Remove the plastic wrap and slice the log into "sushi" pieces using a sharp knife. Drizzle with balsamic glaze before serving.
Notes
Feel free to experiment with other Italian ingredients such as sun-dried tomatoes, pesto, or different types of cured meats.
