Jalapeno Glazed Pork Tenderloin

This recipe features a tender pork tenderloin coated in a sweet and spicy jalapeno glaze.

Ingredients
  

For the Pork
  • 1 lb Pork tenderloin trimmed
  • 1 tsp Salt
  • 1/2 tsp Black pepper
For the Glaze
  • 1/2 cup Apricot preserves
  • 2 tbsp Jalapeno jelly
  • 1 tbsp Soy sauce
  • 1 clove Garlic minced
  • 1/4 tsp Red pepper flakes optional

  • Small saucepan
  • Whisk

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the pork tenderloin dry with paper towels. Season it all over with salt and black pepper.
  3. Place the seasoned pork tenderloin in the prepared baking dish.
  4. In a small saucepan, combine the apricot preserves, jalapeno jelly, soy sauce, minced garlic, and red pepper flakes (if using). Heat over medium heat, stirring until the preserves are melted and the glaze is smooth. Remove from heat.
  5. Brush about half of the glaze over the pork tenderloin.
  6. Roast the pork for 15 minutes. Remove from the oven and brush with the remaining glaze.
  7. Continue roasting for another 10-15 minutes, or until the internal temperature of the pork reaches 145°F (63°C) on a meat thermometer.
  8. Let the pork rest for 5-10 minutes before slicing and serving.

Notes

You can adjust the amount of jalapeno jelly or red pepper flakes to control the spice level. Serve with your favorite side dishes.
