Keto Cinnamon Cheese Bites

Ingredients
  

For the Bites
  • 1 cup shredded mozzarella cheese
  • 2 oz cream cheese softened
  • 1 large egg
  • 1/4 cup almond flour
  • 1 tsp cinnamon
For the Topping
  • 2 tbsp melted butter
  • 1 tbsp cinnamon
  • 1 tbsp erythritol or other keto sweetener, optional

  • Parchment paper
  • Mixing bowl

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the shredded mozzarella cheese and softened cream cheese. Microwave for 30-60 seconds, or until melted and easily stirrable. Stir until smooth.
  3. Add the egg, almond flour, and 1 tsp of cinnamon to the cheese mixture. Mix well until a dough forms.
  4. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  5. In a small bowl, mix together the melted butter, 1 tbsp of cinnamon, and erythritol (if using).
  6. Brush the tops of the cheese bites with the cinnamon butter mixture.
  7. Bake for 12-15 minutes, or until golden brown and slightly puffed.
  8. Let the bites cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes
