Method
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the shredded mozzarella cheese and softened cream cheese. Microwave for 30-60 seconds, or until melted and easily stirrable. Stir until smooth.
- Add the egg, almond flour, and 1 tsp of cinnamon to the cheese mixture. Mix well until a dough forms.
- Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- In a small bowl, mix together the melted butter, 1 tbsp of cinnamon, and erythritol (if using).
- Brush the tops of the cheese bites with the cinnamon butter mixture.
- Bake for 12-15 minutes, or until golden brown and slightly puffed.
- Let the bites cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

You can adjust the amount of cinnamon to your preference. These bites are best served warm but can also be enjoyed at room temperature.
