- Preheat your mini waffle maker.
- In a mixing bowl, whisk together the almond flour, erythritol, cocoa powder, baking powder, and xanthan gum.
- In a separate bowl, beat the eggs, softened cream cheese, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- In a small bowl, combine the melted sugar-free chocolate chips and heavy cream. Stir until smooth. This will be your "Oreo" filling.
- Grease your mini waffle maker if necessary. Spoon about 1/4 cup of batter onto the hot waffle maker. Cook for 3-5 minutes, or until golden brown and cooked through.
- Repeat with the remaining batter, yielding about 4 chaffles.
- Once the chaffles are cooked, carefully spread a thin layer of the "Oreo" filling onto half of the chaffles. Top with the remaining chaffles to create "sandwiches".
- Let the chaffles cool on a wire rack for about 5 minutes before serving.
