Ingredients
  

For the Chaffles
  • 1 cup Almond Flour
  • 1/4 cup Erythritol or your preferred keto sweetener
  • 2 tbsp Unsweetened Cocoa Powder
  • 1 tsp Baking Powder
  • 1/4 tsp Xanthan Gum
  • 2 large Eggs
  • 2 oz Cream Cheese softened
  • 1 tsp Vanilla Extract
For the "Oreo" Flavor
  • 1/4 cup Sugar-Free Chocolate Chips melted
  • 1 tbsp Heavy Cream

Method
 

  1. Preheat your mini waffle maker.
  2. In a mixing bowl, whisk together the almond flour, erythritol, cocoa powder, baking powder, and xanthan gum.
  3. In a separate bowl, beat the eggs, softened cream cheese, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. In a small bowl, combine the melted sugar-free chocolate chips and heavy cream. Stir until smooth. This will be your "Oreo" filling.
  6. Grease your mini waffle maker if necessary. Spoon about 1/4 cup of batter onto the hot waffle maker. Cook for 3-5 minutes, or until golden brown and cooked through.
  7. Repeat with the remaining batter, yielding about 4 chaffles.
  8. Once the chaffles are cooked, carefully spread a thin layer of the "Oreo" filling onto half of the chaffles. Top with the remaining chaffles to create "sandwiches".
  9. Let the chaffles cool on a wire rack for about 5 minutes before serving.

Notes

You can adjust the sweetness to your preference. For a stronger Oreo flavor, you can add a few drops of black food coloring to the batter.
