Korean Spinach Side Dish

This is a simple and healthy Korean spinach side dish, known as Sigeumchi Namul. It's a staple in Korean cuisine, often served with rice and other banchan (side dishes).

Ingredients
  

For the Spinach
  • 1 bunch fresh spinach about 10 oz
For the Seasoning
  • 1 tbsp soy sauce or to taste
  • 1 tsp sesame oil
  • 1 clove garlic minced
  • 1/2 tsp sesame seeds toasted
  • 1/4 tsp salt or to taste

  • Mixing bowl

Method
 

  1. Wash the spinach thoroughly. Bring a pot of water to a boil.
  2. Add the spinach to the boiling water and blanch for 30-60 seconds, until wilted. Do not overcook.
  3. Drain the spinach in a colander and rinse immediately with cold water to stop the cooking process. Squeeze out as much excess water as possible.
  4. In a mixing bowl, combine the squeezed spinach with soy sauce, sesame oil, minced garlic, toasted sesame seeds, and salt. Mix well to ensure the spinach is evenly coated.
  5. Taste and adjust seasoning if necessary. Serve immediately as a side dish.

Notes

You can adjust the amount of soy sauce, garlic, and sesame oil to your preference. For a spicier version, add a pinch of red pepper flakes.
