Lemon Butter Chicken With Asparagus

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 lb asparagus trimmed and cut into 1-inch pieces
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tbsp lemon juice fresh
  • 2 tbsp butter unsalted
  • 1/4 cup parsley fresh, chopped
  • Salt and black pepper to taste

  • Tongs

Method
 

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add asparagus to the skillet and cook until tender-crisp, about 3-5 minutes.
  5. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  6. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  7. Stir in heavy cream, lemon juice, and butter. Cook until butter is melted and sauce is slightly thickened.
  8. Return chicken to the skillet. Add chopped parsley and stir to combine.
  9. Season with additional salt and pepper to taste.
  10. Serve immediately.

Notes

Serve over rice or pasta, or with a side salad.
