Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in cooked chicken and uncooked rice.
  6. Reduce heat, cover, and simmer for 15-20 minutes, or until rice is tender.
  7. Stir in fresh dill, lemon juice, salt, and pepper.
  8. Serve hot.

Notes

You can use leftover cooked chicken for this recipe. Adjust lemon juice to your taste.
