- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a boil.
- Stir in cooked chicken and uncooked rice.
- Reduce heat, cover, and simmer for 15-20 minutes, or until rice is tender.
- Stir in fresh dill, lemon juice, salt, and pepper.
- Serve hot.
Notes
You can use leftover cooked chicken for this recipe. Adjust lemon juice to your taste.
