Method
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes.
- Remove chicken from the skillet and set aside.
- Add butter to the skillet and melt over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Pour in chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
- Return the chicken to the skillet and toss to coat in the sauce.
- Stir in chopped parsley. Serve immediately.
