- Assemble the salad: In a large bowl, combine the cooked quinoa, rinsed chickpeas, chopped parsley, chopped mint, and chopped red onion.
- Dress the salad: Pour the dressing over the quinoa mixture and toss gently to combine.
- Serve: Serve immediately or chill for later.
