Ingredients
  

For the Cookies
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1/4 cup milk
  • 1/4 cup lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1/2 cup peanut butter creamy
  • 3 cups rolled oats old-fashioned
  • 1 teaspoon vanilla extract

Method
 

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the butter, granulated sugar, and milk. Bring to a rolling boil over medium heat, stirring constantly.
  3. Boil for exactly 1 minute. Remove from heat.
  4. Stir in the lemon juice, lemon zest, peanut butter, and vanilla extract until smooth.
  5. Add the rolled oats and mix well to coat.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Let the cookies cool and set for at least 30 minutes before serving.

Notes

For a stronger lemon flavor, you can add an extra teaspoon of lemon zest. These cookies are best stored in an airtight container at room temperature.
