- Line a baking sheet with parchment paper.
- In a medium saucepan, combine the butter, granulated sugar, and milk. Bring to a rolling boil over medium heat, stirring constantly.
- Boil for exactly 1 minute. Remove from heat.
- Stir in the lemon juice, lemon zest, peanut butter, and vanilla extract until smooth.
- Add the rolled oats and mix well to coat.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Let the cookies cool and set for at least 30 minutes before serving.
Notes
For a stronger lemon flavor, you can add an extra teaspoon of lemon zest. These cookies are best stored in an airtight container at room temperature.
